The Incredible Fruitcake Company was started 3 years ago in 2004. Its founders are Mary Galbraith and Debbie Swift.

“We had visited the Food Festival at the National Trust’s Cotehele in the Tamar Valley in Cornwall in 2004. We had been really impressed by the standard and quality of the produce on show and went away wanting to become involved in an exciting and rewarding industry.”

Mary loves to bake and said she had an ‘incredible’ fruitcake recipe handed down through the maternal generations that she thought might be worthy of selling to people . . . the rest is history, here is some of that for you to see. . . . . . .

June 2005 – wished people a ‘Merry Christmas’ at the Royal Cornwall Show in June 2005 inviting them to sample our Incredible Fruitcake! This got us coverage on TV and radio. We were pleasantly surprised to find that people absolutely loved our fruitcake as much as we did and that we would be able to sell our cake commercially!

May 2006 – we listened to our customers and this year we produced a smaller cake. We also won Best Product Runner Up at the Royal Windsor Food and Drink Festival judged by Michelin starred Chef – Marco-Pierre White. There were 70 other top food and drink producers at the event, amongst them Fortnum and Mason (!) who had their fayre tasted by Marco too. He said our cake was ‘delicious’!

2007 – We were becoming increasingly aware of the need to reduce our packaging. We put our thinking caps on and after some lengthy research in to the history of baking techniques we decided to revive the old baking tradition of baking in wood.

After several attempts we finally came up with the perfect bespoke baking box that not only reduced our packaging enormously but also made great cakes! This innovation won us the Taste of the West Best Packaging award 2007.
